What I Eat in a Day |Video|

Over the past few years I have become more and more interested in what I am eating and living a healthier lifestyle. Being healthy is one of my biggest passions. Even my husband will tell you that the inside of our fridge looks like the produce aisle at the grocery store! I think the most difficult aspect of eating right is actually trying to figure out what to eat in the first place!

When we feel stumped with what to make for a certain meal, we tend to make bad decisions. So I thought I would share with what I ate this particular day to give you some recipe idea to kick start a healthy day of eating! Watch the video to see what I like to eat in a day! Recipe details below!

Breakfast

Green Smoothie

Kale, Celery, Spinach, Cilantro, Apple, Banana, Ginger Root, Lemon Juice, Cinnamon

Coffee with Coconut Creamer and Liquid Stevia

Veggie Omelet 

Mushrooms, Red Pepper, Onion, Spinach, Avocado, Salsa and 2-3 eggs.

Lunch

Almond Butter Sandwitch

Gluten Free Toast, Raw Almond Butter, Banana, and Raw Honey

Green Tea (Yogi)

Snack

Orange and/or Lara Bar

Dinner

Quinoa Sweet Potato Medley 

Cubed Sweet Potato Baked at 375 for 30 Minutes

Quinoa |2 Parts Water 1 Part Quinoa| Let Simmer for 15-20 Minutes

Black Beans, Onion, Red Pepper, Kale Sautéed in a Pan with Olive Oil

Avocado Cream Sauce | Avocado, 2 Garlic Cloves, Salt, Pepper, Olive Oil, Lemon Juice, 1 T Water and Cilantro| Blended in a food processor until smooth

Place Cooked Quinoa in a Bowl. Then mix in the sautéd veggies and sweet potatoes. Place Avocado Cream sauce on top!
